* Beetroot Skewers

2tbsp horseradish. 200ml tub creme fraiche. 200g pack cocktail-sized cooked beetroot. Juice and zest of 1 lemon.

In a small bowl, mix horseradish with creme fraiche and season with sea salt and freshly ground black pepper. Thread beetroot on to skewers, and drizzle over lemon juice. Barbecue for a couple of mins on each side, sprinkle with lemon zest, and serve with the horseradish mixture for dipping.

IF ITS RAINING - these are just as good served cold with a tangy dip.
